These Raw Tacos were HIGHLY requested! I’m so excited to share this recipe with everyone because they are so freaking good! For anyone new to my page, I have officially started my raw vegan journey. In this photo, I was fours days into it. Some of you may know that this is my second attempt at a raw lifestyle. I’m still unsure if it will last a lifetime, but I do want to go at least 90 days. I’m hoping to really achieve major detoxing within the 90 days that encourages me to keep going. I want to get to the point that I’m so detoxed, I can cheat with a cooked meal every now and then, without having any negative side effects from eating cooked meals.

Being that this is my second attempt, I came pretty prepared this time. Last time, the first two weeks I craved bread, salty food, and a good crunch. I love fruit and ultimately when I say I aspire to be raw vegan I actually mean fruitarian. But I knew I was going to need tons of veggies in the beginning, with them being more versatile with meals and obviously crunchy.

When I started making this recipe I truly thought this was going to be a fail and they would never see the light of social media. HA! They completely proved me wrong. My husband recently began his vegan journey a little over a month ago. I doubt he’s going the raw vegan route anytime soon, but he got to try these tacos and was completely blown away. We both kind of sat there like wow… these damn lettuce tacos are truly delicious and rich in flavor. Safe to say I ended up making three more batches of these tacos after this photo.

INGREDIENTS:

 

WALNUT MEAT

  • 1/4 cup raw walnuts crushed by hands (DO NOT BLEND)
  • chili powder (or taco seasoning)
  • cumin
  • pink salt (optional)

TOPPINGS

  • red onions diced
  • tomatoes diced
  • green peppers, diced
  • avocado sliced

PICO DE GALLO

  • 1/4 cup tomatoes diced
  • 1/4 cup red onion diced
  • 1/2 key lime squeezed
  • 1 tsp cumin
  • pink salt to taste
  • 1 tbsp cilantro chopped

TACO SHELL

  • 4-5 leaves romaine lettuce as needed

INSTRUCTIONS

  1. Thoroughly wash lettuce and pick the biggest ones to use for tacos.

  2. Crush the walnuts with your hands or a knife and season. Using a food processor is optional for this step. Be careful! They will crumble into dust easily.

  3. Clean, chop and combine the ingredients for pico de gallo. Place in a bowl and refrigerate until you’re done prepping.

  4. Place fresh ingredients on the lettuce first, add walnut meat and then top with pico de gallo. Enjoy and Share!
